Ingredients
1 tablespoon olive oil
1 pound lean ground turkey
1 carrot, diced
2 celery stalks, diced
1 zucchini, diced
6 cups low-sodium chicken broth
3/4 cup cooked rice
1/2 teaspoon dried thyme
Salt and pepper to taste
Optional: chopped parsley
Instructions
Heat olive oil in a pot over medium heat.
Add turkey and cook until browned.
Add carrot, celery, and zucchini. Cook for 4 to 5 minutes.
Add broth and thyme.
Bring to a simmer for 15 minutes.
Stir in cooked rice and heat through.
Season to taste and top with parsley if desired.
Portion tip
Serve in a mug-sized portion first. Smaller servings are often more manageable than a large soup bowl.
